This is such an easy pancake recipe. I use it & will again on Shrove Tuesday. It’s never failed me, yet!
When we lived in London I got all our birthday cakes made by the wonderful Rebecca Stratton. She creates some amazing cakes & has a Facebook page you just want to eat!
This is Rebecca’s recipe & it works. It’s also so much nicer than any packet mixture & takes minutes to make.
Last year I made-up this pancake mixture the evening before. I put the mixture in a sealed container and left it in the fridge overnight, so I was ready to make pancakes before school on Shrove Tuesday.
So I’m sharing Rebecca’s easy Pancake recipe, with her blessing. Go forth & flip!
You need a non-stick pan. You can buy special crepe pans, but I just use a tefal non-stick 28cm Pan which I use only for pancakes. Heat it up, add a splash of oil and away you go.
1 Large Egg 300ml Milk 100g Self Raising Flour (for gluten free use SR gluten free flour with a pinch of xanthum gum) Pinch of Salt
Mix well, and rest for 30 minutes before using
Vegan Pancake mixture:
1/2 Cup Non-Dairy Milk 1/2 cup Water 1 Tablespoon Sugar 2 Tablespoons Maple Syrup 1 Cup Plain Flour 1/4 Teaspoon Salt
Mix well, and rest for two hours
The first pancake is traditionally a bit rubbish, so I always eat this quickly myself before anyone notices.
Just remember practice makes perfect – make double the mixture if you’re worried that you might need to bin a few
