Whilst developing my top tips for getting kids into the kitchen we were making these easy, 3-Step Carrot & Raisin muffins.
We love them, they’re easy to make and they’re nutritious. Enjoy!
This is my easy, fail-safe recipe which requires no scales and no electric gadgets. It’s so easy the children can do it in just 15 minutes. They’re seriously easy to make
1 egg + 1/2 cup veggie oil + 1/3 cup brown sugar
2 cups of plain flour + 1 cup of milk
4 teaspoons baking powder
1 cup grated carrot + 1 cup raisins
Break the egg into a bowl, whisk and add the veggie oil, sugar and milk. Whisk together until combined.
Sift the flour & baking powder directly into the liquid mixture and combine.
Add the cups of grated carrot & raisins at the same time and lightly stir. Spoon mixture into a greased muffin tins or muffin cases if you don’t fancy the washing up.
Bake at 180° /160 fan oven /Gas 5-6 for 15 minutes or until golden. Turn onto wire racks to cool before eating.

Cooking from scratch, using left overs and enjoying seasonal fruit and veg is important to me, and hopefully I’m teaching the Little Shires how important it is for their long-term health, too *it doesn’t mean they don’t throw in a Hariboo or two!*
